So I attempted to make the French Apple Cake for the Chicken n Biscuit dinner. BIG FAIL! Not even worth taking pictures. I was trying to make during my work shift which is usually really quite and of course this particular night I get slammed and overwhelmed with calls and it burns the outside and not cooked enough on the inside. I tasted it and it didn't taste great! Was pretty disappointed with my results hopefully anyone who tries it gets a better result than I did!
French Apple Cake
(baking for the Chicken N' Biscuit Dinner)
Ingredients:
1 1/2 pounds Granny Smith Apples [peeled, cored, cut into wedges and sliced 1/8th inch thick crosswise]
1 Tbsp. Calvados (optional)
1 tsp. lemon juice
1 cup plus 2 Tbsp. all-purpose flour
1 cup plus 1 Tbsp. sugar
2 tsp. Baking Powder
1/2 tsp. salt
1 lrg Egg plus 2 lrg. yolks
1 cup Vegetable Oil
1 cup Whole milk
1 tsp. vanilla
Confectioners sugar
Directions:
* preheat oven to 325 degrees place rack in the middle, spray 9" springform pan w/ vegetable oil spray.
* place prepared pan on rimmed baking sheet lined with aluminum foil.
* place apple slices into a microwaveable pie plate, cover and microwave until apples are spongy and slightly translucent (approx. 3 minutes)
* toss apples with Calvados and Lemon Juice and let cool for 15 minutes
* whisk 1 cup flour, 1 cup sugar, baking powder, & salt together
* in another bowl, whisk egg, oil, milk, & vanilla together until smooth
* Add dry ingredients to wet ingredients and whisk until just combined
* Transfer 1 cup of batter to separate bowl and set aside
* add yolks to remaining batter and whisk using spatula gently
* fold in cool apples and transfer batter to prepared pan
* spread evenly and gently press on apples to compact layer
* whisk remaining 2 Tbsp's flour into reserved batter and pour over batter in pan
* then sprinkle remaining sugar evenly over cake.
* cook for an hour and 15 minutes
* let cool for 2 to 3 hours
* dust with confectioners sugar on top and enjoy!
